Gluten-Free and Easy

I picked up a copy of Gluten Free and Easy by Robyn Russell several months ago. The photographs of the food are spectacular! I have looked through countless gluten-free cookbooks, and many of them don’t provide any pictures of the food. I tend choose which recipe I’m going to make based upon how the final product looks in the picture, so needless to say, I haven’t attempted to many anything featured in any of my pictureless books yet. Gluten Free and Easy was the right cookbook for me, and I have tried several terrific recipes so far.

I love eating salads in restaurants because they often contain a mixture of ingredients that I wouldn’t think of putting together at home, and they taste much better than the boring lettuce and salad dressing combo I usually come up with when left to my own devices. However, this cookbook has some fantastic gluten-free salad recipes, including the Panzanella Salad and Greek Salad. Both salads are quite healthy, contain ingredients that I often have in my kitchen already, and are great by themselves or served as a side dish.

I have also made the Chicken Souvlaki with Tzatziki Sauce, Soy and Honey Glazed Chicken, and the Luscious Little Lemon Puddings, all of which were delightful. All of the recipes included in this book are fairly simple, take less than an hour to make, and seem to turn out every time. My mom also bought the book for some gluten-free recipe ideas even though I am the only one in my family on the diet. With this book and list of gluten free grocery products, even those unfamiliar with a gluten-free diet can prepare a gluten-free meal.
