Gluten-Free Tips for Getting Well

For the first time since being diagnosed with celiac disease, I have been really sick. Here are a few things that I’ve learned through this experience that I thought I’d share because they can be a pain to lookup when you’re under the weather.

If you need to hydrate, all flavors of Gatorade are gluten free. Gatorade has a bunch of crazy flavors now, but I found that Strawberry tasted especially good when I wasn’t feeling well.

I haven’t found any prepackaged gluten-free chicken noodle soup, but here’s the next best thing. On the first day I just had chicken broth, but on the second day Drew created something like gluten-free Ramen noodles and then his version of gluten-free chicken noodle soup.

Gluten Free Ramen Noodles

  • Gluten-free chicken broth (2 C.)
  • 1/4 clove garlic (diced)
  • 1 Tbsp onion (diced)
  • Gluten-free fettuccini-style rice noodles (as desired)
  • salt and pepper (to taste)

Put gluten-free chicken broth in a small pot. Add garlic, onion, salt, and pepper. Bring to a boil. Add gluten-free noodles. Cook noodles according to instructions on package. Serve when noodles are cooked to the desired consistency.

Gluten Free Chicken Noodle Soup

  • Gluten-free chicken broth (1 quart)
  • 2 C water
  • 1/2 clove garlic (diced)
  • ¼ C onion (diced)
  • 2 stalks celery (diced)
  • 1 large carrot (diced)
  • 1 Tbsp chili powder
  • 1.5 tsp celery powder
  • Gluten-free fettuccini-style rice noodles (as desired)
  • 1 chicken breast (about 1/3 lb.), baked and diced
  • Salt and pepper (to taste)

Put gluten-free chicken broth and water in a large pot. Add garlic, onion, celery, carrots, chili powder, celery powder, salt, and pepper. Bring to a boil, then reduce heat. Add gluten-free noodles. Simmer for about 15 minutes. Serve when noodles are cooked to the desired consistency. 

The chicken noodle soup is delicious!

Not to discourage you from making your own Chicken Noodle Soup, but Kettle Cuisine just released individual servings of their gluten-free Chicken Noodle Soup with Rice Noodles. All you need to do is pop it in the microwave and four minutes later you get your soup!

Thanks for the tip! I didn’t know that gluten-free ready made chicken noodle soup was available.
