Gluten-Free Thanksgiving Dinner

Thanksgiving dinner can be gluten-free and delicious! We celebrated Thanksgiving with my family over the weekend, and my mom and sister were able to make an entire gluten free dinner. We had a turkey and stuffing, sweet potato pie, green bean casserole, mashed potatoes, and gravy. My mom has graciously shared her secrets for making a glute-free turkey, stuffing, and carrot cake. I will post the remaining recipes if I can get them from my sister.

Honeysuckle White Turkey is gluten-free. Cooking it in the bag as recommended made it moist and delicious.

Grandma’s GF Bread Stuffing

  • 4 Cups small day old GF bread cubes
  • ¼ to ½ cup minced onions
  • ¼ to ½ cup butter or margarine
  • ½ teas. Salt
  • ½ teas Tones celery salt
  • ½ teas Tones sage
  • 1 egg
  • ¼ to ½ cup GF chicken broth

Cook onion in butter until onion becomes transparent. Add seasoning to bread crumbs, then add butter and onion and toss to blend. Add egg, liquid and toss. This will make 1 qt of stuffing, enough for 1 chicken or small turkey. For less moist stuffing do not toast bread cubes. For large turkey allow 1 cup stuffing for each lb turkey. Use for chicken, turkey or spare ribs.

Grandma’s GF Carrot Cake

  • 1 ½ C corn oil
  • 1 ¾ C sugar
  • 3 eggs
  • 2 cups GF all purpose flour (like Bob’s Red Mill)
  • ½ tsp Xanthan Gum flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 ½ tsp cinnamon (Tones is GF)
  • 1 ½ tsp vanilla extract (Tones is GF)
  • 2 cups peeled, grated carrots
  • 1 cups GF walnuts
  • ½ cup coconut
  • 1 (8 oz) can crushed pineapple, with juice
  • Cream Cheese Icing – see below

Beat together corn oil, sugar and eggs until well combined. In a separate bowl, with a gluten free sifter —-sift together flour, baking soda, salt and cinnamon. Beat together with the sugar and egg mixture. Stir in the vanilla and mix well.

Add the carrots, walnuts, coconut and pineapple. Mix until well blended.

Pour batter into a greased and GF floured 9 -10 inch bundt cake pan-Using corn oil and GF flour. Can also use sugar and cinnamon instead of flour. Bake at 350 deg for about 1 hour or until a tester inserted near the center comes out clean. Cool on cake rack. Remove from pan. Cover with cream cheese icing. Optional – garnish with grated carrots and/or walnuts.

Cream Cheese Icing

Cream together 2 8-oz pkgs of GF cream cheese, 1 ¼ cup powdered sugar/any kind, 1 tsp Tones vanilla extract, blending well.
