Sometimes you need something quick and easy to make for dinner on a busy evening, which can be difficult with celiac disease because it is far easier to avoid gluten when making meals from scratch. Jyoti is a terrific company that makes pre-prepared authentic Indian cuisine that also happens to be completely gluten free. Matar Paneer is by far our favorite Jyoti dish, and because we like food with a kick, I often add a little cayenne pepper while it’s heating on the stove.
