Five Easy Gluten-Free Dinners

Frontera Salsa

Making a gluten-free dinner from scratch every night is very healthy, but it takes a lot of forethought not to mention cooking skill. This is obviously Drew’s forte, but it’s not really mine. So, I make a lot of things from recipes, and I make a handful of easy dinners with pre-packaged foods. Here are five of my favorite stand-bys:

1. DeBoles Corn Spaghetti and Mezzetta Napa Valley Pasta Sauce

I spice up the sauce with red pepper flakes. I often serve the spaghetti with a side of diced mushrooms and zucchini sautéed in garlic olive oil.

2. Jyoti Matar Paneer over Rice

I add cayenne pepper to the matar paneer.

3. Baked Potato

I cook the potato in the microwave and top with butter, salt, pepper, shredded cheese, sour cream, and green onion.

4. Fajita Salad

I start with a layer of greens, then add black beans, grilled chicken sautéed with lime juice and garlic, Frontera Tomatillo Salsa, shredded cheese, sour cream, and green onions.

5. Amy’s Vegetable Black Bean Soup and Pecan Nut Thins

I add cayenne pepper and cook the soup on the stovetop. I serve it with a side of Pecan Nut Thins. Yum!
