Do you have tips for doubling? I attempted it and I think a few things went wrong. I used a mixer when I added the dry ingredients so I ended with quite an airy mixture. I also apparently can't count with kids distracting me and I made 9 instead of 8 LOL Not quite as thick as I'd have liked, obviously, but we'll try again. Anyway, my biggest hold up was that they definitely did not seem done after 16-20 minutes. I know I went well beyond that. Is there some type of "test" to check for doneness, toothpick or something?

Rather than loaf pans, I wrapped foil around one of my Tupperware Oval Modular Mates and it was the PERFECT size.

Regardless, THANK YOU, we'll definitely make this often.
